Farro and Veggies with Lemon Basil Dressing

Farro is an ancient form of wheat. With a nutty flavor and chewy texture, the long grains are perfect for salads like this one. There are plenty of colorful, crunchy vegetables in this hearty salad, and the lemony dressing tastes like summer.

Ingredients

  • 1 cup farro 
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons honey
  • 2 cloves garlic, pressed
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup extra virgin olive oil
  • 1 cup fresh basil, minced
  • 4 large tomatoes, chopped
  • 1 medium cucumber, peeled and chopped
  • 2 scallions, chopped
  • 2 cups fresh spinach, chopped
  • 2 cups fresh arugula, chopped
  • 4 ounces feta cheese, drained and crumbled

Preparation

  1. In a small pot, bring 2 cups of water to a boil, then add the farro. Return to a boil, then cover and reduce to low. Semi-pearled farro cooks in about 25 minutes, while whole farro takes longer and requires more water.
  2. When the water is absorbed and the grains are tender, remove from heat and let stand for at least 5 minutes. Fluff and let cool.
  3. In a cup, whisk the lemon, honey, garlic, salt and red pepper flakes. Stir in the olive oil and basil and reserve.
  4. Place the farro in a large bowl and add the tomatoes, cucumber, scallions, spinach and arugula. Drizzle with the dressing and toss well. Add the feta and gently mix.

Serving Suggestion

This is the perfect salad to bring to a summer potluck.
