Lemon Curd Blossoms

Tender, buttery cookies get an upgrade with the addition of lemon curd. Jarred lemon curd is a real treat, and the tart, creamy curd nestles into the center of each cookie like a spot of sunshine.

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup lemon curd, jarred

Preparation

  1. Preheat the oven to 375 F. Line two baking sheets with parchment and reserve.
  2. In a stand mixer with the batter paddle, or a large bowl with an electric mixer, cream the butter. When fluffy, add the powdered sugar and beat until well-mixed and light, scraping down as needed. Beat in vanilla.
  3. In a cup, stir the flour and salt. Add to the butter mixture and mix until a dough is formed.
  4. Scoop 2 teaspoon-sized portions of dough and roll between your palms to form balls. Place on the sheet pans with 2 inches of space between them. Flatten each ball slightly with your palm.
  5. Bake for 12 minutes or until lightly golden around the edges.
  6. Take out and use the screw top from a bottle of olive oil or your thumb to press an indentation in each one. Transfer to a rack.
  7. Measure ½ teaspoon portions of lemon curd and place in the indentations of the warm cookies; swirl to fill the round.

Serving Suggestion

Garnish with colorful fresh citrus and serve with a favorite warm beverage.
