Ingredients

Salad Ingredients: 
2 medium-sized tomatoes, diced 
1 avocado, diced
1 mango, diced
1 medium red onion, diced
15 ounces canned black beans, rinsed
15 ounces canned black eyed peas rinsed
1 10 oz. bag SnoPac frozen corn, thawed
2 bell peppers (any color), diced
1 jalapeño, seeds removed & finely diced
¼ cup fresh cilantro, chopped (optional)
1 bag Tortilleria Zepeda tortilla chips for serving

Dressing Ingredients:
¼ cup olive oil
2 tablespoons fresh lime juice
2 tablespoons red wine vinegar
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon chili powder
½ teaspoon paprika
½ teaspoon ground cumin
½ teaspoon black pepper

Preparation

  1. Combine dressing ingredients in a large bowl and whisk together.

  2. Add the remaining ingredients to the bowl. Gently toss together until dressing has coated all ingredients.

  3. Serve with tortilla chips and enjoy!

Serving Suggestions

This recipe is best when items are local and fresh, however, you can utilize preserved ingredients if needed (e.g. canned tomatoes and corn, frozen pepper, etc.) Make it your way! Not a fan of mango? Substitute for another sweet fruit, like diced peaches. Like it spicy? Add another jalapeño! Don’t have fresh limes? Opt for bottled juice. Explore your taste buds and customize it to your favorite flavors, budget, and family size.
