Gazpacho... Make it a Whole Meal Deal for a Hot Day

Gazpacho is a cold soup with Spanish origins, traditionally tomato-based, made with aromatic herbs and vegetables, like onion, mild to hot chiles, garlic, cucumber, olive oil, basil, parsley, vinegar and /or lemon juice. It’s bright flavors and colors make cold gazpacho a warm weather favorite.

If you don’t mind breaking with tradition a bit, there are many variations that can turn this cool soup into a complete dinner. Add whatever vegetables are in season... spinach, asparagus, celery, etc. Add croutons for starch, or even some leftover noodles. Add protein (cooked chicken, shrimp, tofu, etc).The possibilities are infinite. The ingredients can be finely chopped by hand into uniform bits, or for a quicker and easier version, try pulsing everything in a food processor or blender to a rough chop, or blend completely into a puree. If you use the blended method, just blend the veggies and add the toppings and proteins later to serve. A dollop of sour cream and an herb sprig will make a great presentation, and this nourishing and fresh soup will have your body saying, “Thank you!”
