More info about the cheese: St. Brigid's Organic Autumn White Cheddar is produced from the milk of a single unique herd of Coon Valley, Wisconsin Jersey cows on early fall pasture. It is processed by Cedar Grove Cheese, an award winning creamery in Plain, Wisconsin. According to their cheese makers at Cedar Grove, the cheese yield was 40% higher than their average batches due to the superior quality of milk.
