Local carrots are still available, and what better way to celebrate them than with carrot cake! This is one of my favorite desserts and it is a total crowd-pleaser. Plus, it is perfect for those on gluten-free or grain-free diets, but everyone loves it of course.

We are grateful to still purchase local carrots from our local farmers... We are also happy to help freshen up our ever-ghostly winter complexions by adding some vitamin A/rich beta carotene to our food palates!

Every year as we come out of the holiday season and dive into the new calendar year, I have trouble shifting my local-food-eating gears. The switch from eating delicious greens (like salad mix, spinach, and kale) over to a wide array of root vegetables (like beets, parsnips, carrots, and turnips) is always difficult for me. It takes a deliberate effort to designate the vegetable portion of my meals to these healthy and local root veggies.
