Tini's Tomatillo Salsa (Salsa Verde)

1½ lbs. fresh tomatillos
5 fresh serrano chiles
½ cup fresh cilantro
3 cloves garlic, unpeeled
1 large onion, coarsely chopped
2 tsp. salt
1. Preheat boiler.
2. If using fresh tomatillos, remove husks and rinse under warm water to remove stickiness. If using called tomatillos, drain and measure out 2 cups.
3. Boil chiles, garlic and fresh tomatillos (do not boil canned tomatillos) on rack of boiler pan 1 to 2 inches from heat, turning once, until tomatillos are softened and slightly charred. This takes about seven minutes.
4. Peel garlic and pull off tops of chiles. Puree all ingredients in an a blender.
- Salsa is best served chilled. Make this recipe in advance and chill in the refrigerator for up to seven days.
