Ahhh, the decadence...
Super fun treat to serve at events & easy to stretch recipe by adding seltzer, ginger ale... OR – for those over 21 years old, consider adding alcohol (think “gin” or “vodka”). Very nice as a summer mimosa with bubbly champagne.
You can definitely make extra & freeze ahead of time... Put in ziploc bags once cool & lay on sheet pan until frozen (stores very nicely when only minimal freezer space is available)!
Prep Time: 20-30mins. (plus 1-2hrs chilling time)

2 cups water
1 lb rhubarb, diced into ~1" chunks
Zest of 2 lemons
3 cups strawberries, halved
4 cups organic lemonade, such as Santa Cruz
-In large pot, bring water to boil, along with rhubarb & lemon zest. Reduce heat & let everything simmer, covered for ~15mins.
-Add strawberries & simmer another 2-3mins.
-Remove from stove & let cool completely.
-Place mixture in blender with lemonade & puree until completely smooth.
-Refrigerate until cold.
