Sautéed Parsnips with Honey & Thyme

So delicious, nutritious, EASY+QUICK, why buy fast food french fries when you can make your own at home?! Try this recipe and you will be hardpressed to say you don't prefer these to all other store bought veggie matchsticks!



2 Tbsp olive oil
1 lb parsnips (~2 large), peeled & cut into thin 4" long sticks 
1 Tbsp butter
1 Tbsp fresh thyme, chopped
1½ Tbsp honey
Salt & pepper, to taste



-Heat oil in large skillet over med-high heat. Add prepared parsnips. Sprinkle with pinch of both sea salt & pepper. Sauté until parsnips begin to brown at edges, ~12 mins.

-Add butter, thyme & honey to vegetables. Toss over medium heat until heated through & vegetables are glazed, ~5 mins.

-Season to taste with more salt & pepper, if desired. Serve warm.
