We just found a fun way to eat our vegetables... With an easy recipe like this, just TRY to resist buying up all the adorable new baby bok choys in our produce department!
Roasted Spicy Baby Bok Choy
Prep Time: 15mins.
6 baby bok choy, sliced in half lengthwise
2 Tbsp olive oil
2 tsp toasted sesame oil
2 cloves garlic, minced
1-2 tsp red pepper flakes (to taste)
2 Tbsp rice vinegar (or any other preferred/available vinegar)
1 tsp honey
2 tsp sesame seeds
1 1/2 sea salt
-Preheat oven to 400º F.
-Whisk together olive & sesame oils, garlic, pepper flakes, vinegar, honey, sesame seeds & sea salt.
-Place bok choy on baking sheet & pour the prepared sauce over the top.
-Massage the marinade into bok choy to incorporate it well into the layers.
-Bake for 6-8 mins. until bok choy is wilted & leafy tops have become slightly crisped.
