Springtime is clearly here! Get your family to eat nutritious veggies with this simple recipe. Also consider adding your favorite spring veggies per your preference & seasonality (i.e. radishes, snap peas, etc.)!

Ingredients
1½ Lbs fresh asparagus, thinly sliced on the bias
3 carrots, grated
½ cup frozen peas, thawed (or fresh)
⅓ cup fresh mint, chopped
⅓ cup thinly sliced red onion
2 Tbsp extra virgin olive oil
2 Tbsp lemon juice
1½ tsp sea salt
Feta cheese to garnish
Directions
-Combine carrots, asparagus, peas, mint & onion in large mixing bowl.
-Add olive oil, lemon juice & sea salt. Toss to incorporate dressing.
-Garnish with crumbled feta cheese & serve.
